King Prawn Linguine Recipe

Looking at the recipes from this blog it's pretty obvious that I like things that are fast and easy...the least amount of fiddling and washing up the better! That's one of the reasons I love this prawn linguine. It literally takes as long as pasta needs to cook from start to finish, and it tastes so good too. Now, unusually I've written this recipe for one person. That's because I only ever make this for myself if I happen to be eating alone (other half hates prawns but I love them). You may think the bacon is odd but it's one of those ingredients that you don't notice but gives a deep salty undertone to the sweetness of the other elements. I see this dish a lot in the ready meal aisles but seriously this is so quick and simple I don't see why you would need to buy it ready done (and it's cheaper this way too). You can obviously make this for more than one by multiplying up the quantities!



Ingredients


  • 80g dried linguine pasta
  • 150g peeled and uncooked king prawns
  • 1 clove garlic
  • 10 baby plum tomatoes
  • half of a red chilli
  • Oilve oil
  • salt and pepper
  • Optional - 1 rasher smoked bacon
  • Fresh basil leaves

Method

1. Fill a kettle with water and set it to boil. As soon as it does pour it into a medium sized saucepan and bring to the boil again. Add in some salt and the pasta, cooking according to the instructions on the packet.

2. Set the heat to medium under a small frying pan. Snip in the bacon (if using) with a little olive oil. Quarter the tomatoes and add these too.

3. Once the tomatoes have begun to get squishy crush in the garlic. Slice the chilli and add this in too. Season with salt and pepper.

4. Test the pasta - it should almost be ready. Ideally you want to add the cooked pasta to the sauce as the prawns are just cooked so try to time them both together. 

5. Add the prawns to the sauce. They won't take long to cook (about 2 mins per side), and you don't want to overcook them either. When they are pink they are done.

6. Using tongs take the pasta out of its cooking water and add to the frying pan. If a little of the cooking water ends up in the pan it's not the end of the world as it helps to emulsify the sauce. (Sometimes I add a spoonful of this water to the sauce at stage 3).

7. Toss everything together and tear in some basil.

8. Serve.

(I have an admission to make here....I add grated parmesan to mine. I know it's a massive no no to mix cheese and fish but I can't help it)
